Jiffy Corn Casserole

JIFFY CORN CASSEROLE  
 

1 can whole kernel corn, drained
1 can creamed corn
2 eggs, beaten
1 stick butter, melted (or 1/2 c. oil)
1 cup. sour cream
1 box Jiffy corn muffin mix

 

Mix all ingredients adding the muffin mix last.  Bake in a greased casserole dish or 9″x13″ or 7″x11″ baking dish at 375 degrees for 30 to 45 minutes or until fully cooked in center/lightly brown

Weekend Stuff

This past weekend was a lot of fun. Friday night we went to a Japanese restaurant with Dan’s family. The food and company was great. then dan’s band had a show, which was a lot of fun. Saturday we had a friend over with her dog. Sunday we attended a dog show that had a Vizsla supported entry. A friend of ours handled her puppy’s daddy in veterans and did a nice job.

Butternut Squash Soup with Sweet and Spicy Pecans

SIX SERVINGS
Prep Time: 20 min
Cook Time: 1 hr

INGREDIENTS

2 butternut squash (about 4 1/2 pounds), halved lengthwise, seeds removed

4 tablespoons butter, 1 tablespoon melted

Salt and pepper

1 large onion, chopped

   2 ribs celery, chopped

2 tablespoons brown sugar

1 cup pecans, coarsely chopped

1 teaspoon chili powder

2 cups chicken broth

2 cups milk

 1. Preheat the oven to 400º. Place the squash cut side up on a rimmed baking sheet. Brush with the melted butter and season with salt and pepper. Bake until brown on the edges and fork-tender at the thickest part, about 1 hour.
2. Meanwhile, melt 1 1/2 tablespoons butter in a large soup pot over medium heat. Add the onion and celery, season with salt and pepper and cook, stirring occasionally, until softened, 6 to 7 minutes.
3. Melt the brown sugar and remaining 1 1/2tablespoons butter in a small skillet over medium-low heat. Add the pecans, chili powder and 1/2 teaspoon salt and cook, stirring, until the nuts are toasted, about 5 minutes. Let cool.
4. Scoop the squash flesh from the skins and add to the soup pot. Add the broth and milk and bring to a simmer, stirring occasionally. Using an immersion blender, puree the mixture in the pot, over low heat, until smooth (or transfer in batches to a blender and puree). Serve in bowls, topped with the pecans.

 

Friends, Family and Music

I finally got to meet baby charlie. My friend Stephanie brought him over to our house for a visit. He is a good baby and looks so much like his daddy. Bruno was very focused on everything Charlie was doing. He could have cared less about anything else. Then my mom came to visit for the night. She enjoyed some quality time with us, bruno and lyric. Dan’s band had a show and we went to watch him play. It was a great show. Sunday our neighbors brought their dog bella over to play with boys, everyone had a good time.

Amanda was sick last week and Dan sick this week, so we havent been doing a lot recently. Lyric is settling in. He and Bruno get along but dont play too much, yet. Lyric has been getting socialized with lots of people and dogs.  Today both boys had a home spa day(yes boys go to the Spa). Both had baths, ears cleaned, nails cut and teeth brushed. well Lyric just licked the toothpaste and chewed on the brush, but you gotta start somewhere right? Here are some pics of them this week.

Name change

Our puppy’s name is now Lyric, although one of his nicknames is Mr. Cajun along with “Little Man” . After an eventful trip home we are all settling in. He slept thru the night his first night home. He is doing very here and making nice progress.
